One Avocado /sliced
Baby Spinach Leaves
10 assorted color cherry-sized tomatoes /halved
Crumbled Feta Cheese
2 pieces of your favorite toast
4 poached eggs
Bring 4 cups of water to a boil. Add half a capful of white vinegar to the egg water. Half tomatoes and set aside. Toast your favorite bread. Prepare avocado, remove pit, slice length wise. Place on toast.
Poach eggs until white is firm but the yolk is warm and runny. Remove poached eggs with a slotted spoon so you don't transfer water. Place eggs (2) on top of the avocado. Top egg with spinach, tomato halves and crm bled feta cheese. Salt/Pepper to taste.
